Grilled Cheese Everything Bagel Breakfast Sandwich

Ingredients

Everything Bagel
1 - 2
slices of bacon
2
eggs
2 Tbsp.
Plain Cream Cheese
1 slice
of your favorite deli cheese
Handfull
of fresh spinach
As needed
butter for grilling the sandwich

Instructions

Slice the bagel in half and set it aside.

I like to use those super thin bagel-thin bagels since they're so easy to eat sandwich-stye. Feel free to use a regular bagel if desired, or you can even use mini bagels. Whatever bagel you love is the bagel to use!

Next, begin cooking bacon via your favorite method (I bake mine on parchment paper, but you could also fry it up on a skillet if you prefer)

While the bacon cooks, fry your eggs or cook via the method of choice.

For crispy fried eggs, heat a large cast-iron skillet to medium-high heat with a little oil or butter. Crack your eggs into a small bowl, then pour them into the pan, and separate them from one another. Cook for a few minutes until your idea of drippy egg perfection is reached. Covering the pan halfway through cooking [after about a minute or two] helps cook the top of the egg and is my go-to technique for a perfect fried egg!

Toast your bagel and spread with cream cheese. Top with sliced cheese, eggs, bacon, and spinach. If you have one handy, you can press the sandwich using your favorite panini press for a melty breakfast grilled cheese that will rock your morning! There's no wrong way to make an egg sammie; just make one! This bad boy is straight-up delicious!

Notes

If you can find it, feel free to add 1-2 ounces of grated Cabot Everything Bagel Cheese to your breakfast sandwich. SO GOOD!

Double, triple, or quadruple the ingredients depending on how many sandwiches you need. No need to measure, just use this as meal-spiration and have fun with breakfast!

Eric's Bagels

It is with a heavy heart we share that we have begun our final countdown.

Effective December 30th 2024, Eric’s bagels will be closing due to the many challenges that small businesses face.

I would love to continue to providing delicious bagels, yet the cost of items, labor, rent etc…has gone up more than we can handle, and we can no longer keep trying to sustain our business.

I would also loved to have found a business partner, and or have a small store front, yet unfortunately for the meantime we will close our operations. 

Don’t worry, you still have a few weeks to get your orders in for that final bite.

I’m not totally giving up yet though.

Just jumping off the hamster wheel for a little while and see what the new year brings for opportunities.

Thank you for supporting us throughout the years and just know we will miss serving you, our community.
